Pollo alla Diavola grigliata – Grilled devilled chicken

This is an exceptionally easy way to cook a whole chicken on a barbecue or even under a grill.

The most difficult part is splitting open the chicken but once you have that mastered it really is easy.

Ingredients for 4 person

1 small chicken, max 1,2kg

Garlic

Chilli (optional)

Lemon juice,

Salt

Paprika (sweet)

Rosemary

E.V.O.O

Preparation

To split the chicken you will need to remove the breast bone, simply cut with a very sharp kitchen knife down the centre of the breast for the whole length of the chicken, repeat on both sides of the breast bone which runs centrally down the breast, you should now be able to pull out, with a little help from the knife, the breast bone, with this done the chicken can be flattened, and dressed.

On both sides, sprinkle with chopped garlic and the optional chilli, fresh is best, squeeze lemon juice and sprinkle a good pinch of salt, Finally sprinkle with sweet paprika, a few sprigs of rosemary and a good drizzle of olive oil.

To cook, simply place on or under a medium hot grill (or barbecue), turn frequently until thoroughly cooked, serve with grilled fresh peppers and courgettes.
